the best buttercream frosting EVER...

here it is. this is no joke. I have been around the kitchen since birth and can make a mean buttercream. This Gale Gand recipe put all of my favorites to shame. We added fresh lemon zest and lemon juice for our stellar lemon cupcakes and then tried out some coconut extract for our tropical coconut cupcakes that my best friends and I made over the weekend for our friend Maddy's shower.

Do yourself a big favor and avoid using packaged frostings and cakes. Just turn it over and read the ingredients of the frosting if you don't believe me, or read them here...

Sugar, Vegetable Oil Shortening (Partially Hydrogenated Soybean and Cottonseed Oils, Mono- and Diglycerides, Polysorbate 60), Water, Corn Syrup. Contains 2% Or Less Of: Corn Starch, Salt, Colored with (Titanium Dioxide, Yellow 5, Red 40), Preservatives (Potassium Sorbate), Natural and Artificial Flavors [Milk], Lactic Acid, Sodium Acid Pyrophosphate, Citric Acid, Sodium Citrate.
